Mexican Pork Stew


1lb.boneless pork — cut into 1/2" cubes
1Tbsp.olive oil
1c.chicken broth
1 1/2tsp.garlic salt
1 1/2tsp.ground cumin
1tsp.chili powder
1tsp.oregano
1can(s)whole kernel corn — drained
1can(s)black beans — drained & rinsed
1can(s)red kidney beans — undrained
1can(s)chopped green chilies — 4 oz.
1/2c.green onion — sliced

1.Heat oil in a large skillet over medium-high heat.
2.Add pork and cook 5 minutes, stirring often.
3.Remove pork and set aside.
4.Add remaining ingredients, except onion to skillet.
5.Mix well.
6.Bring to a boil; reduce heat and cook 10 minutes.
7.Stir in cooked pork and onion; simmer 10 minutes.

Yields 6 servings.
