1. | Beat eggs on high for 2 minutes then add sugar. |
2. | Add pumpkin, lemon juice, and pumpkin spice. |
3. | Sift flour, baking powder and salt then fold into the pumpkin mixture. |
4. | Line a cookie sheet with wax paper, grease and spread mixture into pan. |
5. | Bake at 350 for 15 minutes. |
6. | Turn pumpkin roll out onto a dry towel sprinkled generously with powdered sugar, then roll cake and towel together; cool -- unroll. |
7. | Mix filling ingredients and beat until smooth. |
8. | Spread onto cake. |
9. | Re-roll and slice. |
