Waffles


2Eggs
2c.Buttermilk
2c.All-Purpose Flour
2tsp.Baking Powder
1tsp.Baking Soda
1/2tsp.Salt
6Tbsp.Shortening

1.Heat waffle iron
2.Beat 2 eggs in bowl until the whites and yellows are mixed.
3.Add remaining ingredients and beat until smooth.
4.For each waffle, pour the batter from cup onto the center of the hot waffle iron. (Use about 2/3 cup batter in a 7-inch round waffle iron or about 1 1/3 cups batter in a 9-inch square waffle iron.)
5.Cook about 5 minutes or until steaming stops.
6.Remove the waffle carefully with fork. Serve with butter and syrup.

* If using self-rising flour, omit the baking powder and salt. *
Variation — Blueberry Waffles: Follow recipe for waffles except--sprinkle 2 tablespoons blueberries over the batter for each waffle as soon as it's been poured onto the waffle iron.
