What is probably the oldest of Sweden's traditional recipes remains one of its most popular.

The history of Swedish pea soup goes back to Viking times, when it was cooked over an open fire, sometimes for a whole village at once. A thick soup of dried yellow peas, onion, pork, and herbs (thyme, for instance).

When Sweden was a Catholic nation, people at this soup on Thursday to keep them going on meatless Friday. Nowadays it is eaten whenever one feels like it, but curiously often on a Thursday.

You can buy it ready-made in the shop. Heat it gently and then enjoy it with or without pork, but always with pancakes, jam and whipped cream to follow A little more thyme and Swedish mustard will give it that extra edge.

A good cold beer goes down very well indeed with this soup, but to do the thing in real Swedish style, there should also be warm arrack punch.
